Hand-picked fruit was picked and chilled at the winery, before whole-bunch pressing to stainless steel tank. Pristine juice was cold settled, and racked to barrel with fine solids for wild fermentation. Matured in a mix of new and seasoned French oak for 8 months, with careful lees stirring to build texture and complexity.
