Sawyers Bay Single Malt is the name of our unpeated expressions. 100% Tasmanian malt barley, distilled in our copper pot stills on Flinders Island. This spirit is a beautiful example of the quality of Tasmanian malt, and the smooth, sweet profile often found in our whiskies. We will be choosing a variety of casks to mature our unpeated expressions. From bourbon to Port, rum or wine, and anything in between. Each batch of Sawyers Bay that is bottled will be unique; tasted and judged on it’s own merits. As with a wine vintage, there will be similarities between bottlings, but no two will be the same.
